NTT is one of the small islands among thousands of islands in Indonesia which are unique. because in the NTT area there are various tribes, cultures, and one of them is food. well if we talk about food, the province of nusa southeast east has a lot of very delicious and delicious typical food.

1. Bose Corn

This traditional dish, known as corn bose, has become a staple substitute for rice. According to Timorese tradition, bose corn is only made from white corn. The cooking process takes quite a while. However. more delicious if the corn is cooked using firewood. Finally, add a little salt and coconut milk to add to the flavor of the bose corn.

2. Kolo

Manggarai, East Nusa Tenggara, has traditional specialties with natural flavors. The food is kolo or grilled rice cooked using bamboo. To be able to produce grilled rice or bamboo rice, it takes ingredients in the form of young bamboo that has been cut to the desired size, rice and cooking spices. The word se'i comes from the island of Rote language which means thinly sliced ​​meat. Actually you can also use other types of meat, the important thing is that the meat is a little thicker so that it can be sliced ​​thin. Before serving, se'i meat can be reprocessed according to taste.
Se'i meat at first glance is similar to western-style smoked beef, but with a different taste. The process of making se'i is very traditional because it still uses coals from charcoal and kesambi leaves. Kesambi or kosambi is a tree that can grow in dry areas and is a close relative of rambutan because it belongs to the Sapindaceae tribe. The smoking process begins with slicing the meat lengthwise and covering it with salt. It is then hung to dry the water or blood in the meat for several hours. Meanwhile, kesambi leaves are used as a filter for excessive heat and smoke. This is what keeps the aroma and color of the meat intact.

4. Lawar Fish

Lawar fish is a dish containing fresh, uncooked fish. For those of you who are afraid to eat raw fish, fear not! This dish is guaranteed safe and delicious. Lawar fish is usually made from sea fish which is cut into thin strips and cleaned and then soaked in a mixture of vinegar and lime. The fish used can also use anchovies. In this bath the bacteria will die and the fish will be "cooked". A sign that the fish is ready for consumption is the color of the fish that turns milky.

5. Karmanaci

Karmanaci is a typical NTT meat dish. As a typical food of NTT, Karmanaci is a favorite and popular. Karmanaci consists of minced beef stir-fried with spices. However, before frying this meat, it is boiled first with spices, grams, sugar and other spices. Karmanaci feel soft and delicious because of these two processes. For the boiling process, the meat is usually boiled with sugar, gram, sweet soy sauce, soy sauce, ginger and pepper. If the meat is tender, then it is ready to be sauteed along with garlic, onion, coriander, pepper, sugar and tamarind water. If the aroma of the stir-fry is fragrant and the meat has absorbed the spices, the karmanaci is ready to be served

6. Rampe Rumpu

Rumpu rampe is a typical food of NTT in the form of stir-fried papaya leaves and papaya flowers. This stir fry is usually served at home as a favorite vegetable dish. This dish usually consists of sauteed papaya leaves and flowers with the addition of shallots, garlic, red chilies and even cayenne pepper if you like spicy taste. All the ingredients were stir-fried with spices such as salt and sugar and other spices.

7. Starfruit Sauce

If you are looking for fresh, savory and gravy typical NTT food, you can try the star fruit soup dish.
Starfruit soup is usually made from tuna which is cooked like soup but with the addition of special spices and also thinly sliced ​​star fruit. The spices commonly used for this dish are fine spices consisting of turmeric, pepper, salt, sugar, ginger, shallots, garlic, curly chilies, star fruit wuluh, scallions, kaffir lime leaves and also lemongrass, if still needed. Shabu sugar is a typical food of Sabu Island which is very unique and useful. At first glance, shabu sugar is in the form of a very thick and sticky liquid with a dark brown color. This type of food is made from basic ingredients that are tapped from palm trees. In other areas, this type of sugar can also be made from materials tapped from palm trees or coconuts. Shabu sugar is a processed product of the majority of the population of Sabu Island.
